Shakshuka Cheese Bake

This recipe is a pizza style easy bake which is perfect to make with the kids or have for a tasty brunch.
Serves 2

Ingredients
2 brown onions, thinly sliced
2 red peppers, thinly sliced
oil of choice
1 tsp cumin seeds
2 garlic cloves, grated
400g chopped tomatoes
½ tsp chilli powder
1 tsp salt
2 tsp ground cumin
1 tsp sugar
1 tbsp rose harissa paste
handful fresh coriander, roughly chopped
2 tortilla wraps
60g cheddar cheese, grates
60g mozzarella
2 eggs

Method
– Preheat the oven to 180°C / 160°C with a fan.

– Add 2 tbsp of oil to a hot pan. Add the cumin seeds and let them sizzle.

– Add the onions and cook for 5-6 minutes until lightly golden.

– Add the garlic and cook for 1 minute. Add the red peppers and cook for 5 minutes.

– Add the chopped tomatoes and mix well.

– Add the chilli powder, salt, ground cumin, sugar, and harissa paste. Mix well, cover, and cook on low heat for 15 minutes.

– Add the coriander and stir through. Turn off the heat.

– Add 3 heaped tbsp of the onion and pepper mixture to 1 tortilla wrap. Create a well in the middle.

– Crack 1 egg into the central well and sprinkle some cheddar and mozzarella cheese on top.

– Repeat the process with the other tortilla wrap. Place both in the oven for 15 minutes.
