Sarson Ka Saag

If you can find fresh mustard leaves, this is definitely one to try! A heavenly dish you can enjoy with your family.

Ingredients
1 bunch of fresh mustard leaves
olive/sunflower/vegetable oil
1 handful spinach leaves
4 garlic cloves
1 thumb-sized piece of garlic
2 green chillies
2 dried red chillies
1 brown onion, finely chopped
1 tsp salt
½ tsp turmeric powder

Method
– Chop the stems off of the mustard leaves and then roughly chop the leaves.

– Cook the mustard leaves and spinach in a large pan on medium heat until wilted.

– Add the wilted mustard leaves, spinach, 2 garlic cloves, ginger, and green chillies to a food processor, and blitz for 2 minutes. Add 2 tbsp of water if necessary.

– Add 2 tbsp oil to a hot pan along with the red chillies and onion. Cook until golden.

– Grate 2 garlic cloves and add to the pan. Cook for 1 minute.

– Add the mustard leaves mixture to the pan. Mix well.

– Add 100ml of water, salt, and turmeric powder. Stir through and cook for 2 minutes.

Serve in a large bowl with a generous knob of butter in the middle.
