This is a super simple dinner idea of roasted cauliflower and satay sauce. This recipe is by Dominique Woolf and from her book, “Dominique’s kitchen“.
Serves 4 people.
Ingredients
1 cauliflower, including leaves, roughly chopped
½ tsp salt
handful fresh coriander
200ml coconut milk
1 ½ tbsp curry powder
2 tsp light soy sauce
1 tbsp soft brown sugar
5 tbsp crunchy peanut butter
2 tbsp Thai red curry paste
oil of choice
Method
– Preheat the oven to 240°C / 220°C with a fan.
– In a large roasting tin, add the cauliflower, salt, 2 tbsp oil, and curry powder. Mix well and cook in the oven for 25 minutes.
– Add 1 tbsp oil to a hot pan. Add the Thai red curry paste, coconut milk, peanut butter, light soy sauce, soft brown sugar, and 100ml water. Mix well and cook for 2 minutes.
– Add the roasted cauliflower and cook for 2 minutes.
Serve with piping hot rice and garnish with fresh coriander – enjoy!
