An easy and delicious Sabji which you can enjoy in several different ways and a perfect way to use any leftover chicken.
Ingredients
leftover roast chicken
sunflower/rapeseed/vegetable oil
2 medium onions, thinly sliced
4 tbsp natural yoghurt
1 tsp cumin seeds
1 stick of cinnamon
6-8 cardamom pods
2 dried red chillies
4 garlic cloves, roughly chopped
1 tsp salt
1 tsp garam masala
2 tsp ground coriander
1 tsp chilli powder
1 tsp chaat masala
1 tsp amchoor powder/dried mango powder
Method
– Add 2-3 tbsp of oil to a hot pan.
– Add the cumin, cinnamon, and cardamom to the pan and let them sizzle and then add the onions and red chillies. Cook for 10 minutes until golden.
– Add the garlic and cook for 5 more minutes.
– Meanwhile, chop the chicken into small pieces
– Add the salt, garam masala, ground coriander, chilli powder, turmeric, and Amchoor powder. Mix well.
– Add the chicken and stir through. Turn the heat down and add the Natural Yoghurt and stir through again. Cover and cook for 5 minutes.
This would be perfect served in a wrap, with rice or naan – it’s versatile.
