Red Onion Chutney

This easy and quick chutney is super delicious and packed with flavours. It’s spicy and sweet with a hint of sour. Great to eat with rice, curries, chapati or breads, crisps and lot more.

Ingredients
oil of choice
1 red onion, roughly chopped
6 dried red chillies
2 tbsp roasted peanuts
1 tsp tamarind paste
¼ tsp salt
2 tbsp jaggery/brown sugar
1 tbsp roasted peanuts, crushed

Method
– Add 2 tbsp oil to a hot pan. Add the chillies and let them sizzle for 30 seconds.

– Add the red onion and cook for 6-8 minutes on low-medium heat until golden.

– Add the peanuts and cook for 2-3 minutes.

– Add the tamarind paste, salt, and jaggery. Mix well and cook for 1 minute.

– Allow it to cool for 10 minutes before you transfer to a blender. Add a splash of water and blitz to paste.

– Transfer to a serving bowl and garnish with crushed roasted peanuts.
