Chosen for you by my kids, this recipe is easy, tasty and done in 30 minutes – what more could you want?
Ingredients
1 medium onion, finely chopped
olive oil
1 tbsp butter
3 garlic cloves, grated
6 spring onions
4 chicken breasts
400g pasta
3 tbsp cream cheese
1 tin of chopped tomatoes
1 tsp salt
1 tsp smoked paprika
1 tsp dried oregano
1 tsp dried thyme
ground black pepper
Method
– Add 4 tbsp of olive oil to a large hot pan, along with 1 heaped tbsp of butter, and onion. Cook for 5 minutes to soften.
– Meanwhile, boil 800ml of water in a kettle.
– Roughly chop the white parts of the spring onions and add to the pan.
– Chop the chicken into small pieces.
– Add the grated garlic to the pan, along with the salt, smoked paprika, dried oregano, dried thyme and plenty of ground black pepper. Mix well.
– Add the chicken and stir through on high heat for 2 minutes. Let the spices coat the chicken.
– Mix in a tin of chopped tomatoes, the pasta, and boiled water.
– Cook between low to medium heat for 15-20 minutes.
– Meanwhile, finely chop the greens of the spring onion.
– Once the pasta is cooked, add the cream cheese. Mix well.
Serve and add the greens of the spring onion to garnish.
