Potato Stuffed Bread Rolls

Relive the nostalgia with one of my childhood favourite snacks – crunchy bread rolls! These delightful treats, filled with spiced potatoes, were a lunch box staple and a weekend delight. I’m thrilled that my family now enjoys them too, making the experience even more special. Try these golden-fried delights with ketchup or chutney for a tasty trip down memory lane.

Ingredients
3 red potatoes, peeled and boiled
½ tsp salt
¼ tsp chilli powder
½ tsp garam masala
½ tsp amchoor/dried mango powder
½ brown onion, finely chopped
small handful fresh coriander, finely chopped
6 slices white bread
oil of choice

Method
– Place the boiled potatoes in a large bowl and crush them. Add the salt, chilli powder, garam masala, amchoor powder, onion, and coriander. Mix well.

– Fill a large bowl with water. Quickly dip one slice of bread in the water and then squeeze out the excess.

– Take a handful of potato mixture and place it in the middle of the bread. Fold and press the bread around the filling to seal.

– Repeat the process with the remaining ingredients.

– Heat 2 cups of oil to 180°C in a deep frying pan. Place 2-3 bread rolls in the oil and cook on high heat until golden.

– Use a slotted spoon to transfer to a kitchen roll-lined plate to remove the excess oil. Repeat the process with the remaining bread rolls.
