Potato Puffs

These delightful little snacks are perfect for parties or picnics, and with ready-made puff pastry, they’re incredibly easy to whip up. Whether you prefer them hot or cold, pair them with chutney or ketchup for a satisfying treat. Don’t miss out—give these a try and enjoy the delicious simplicity!
Makes 16 puffs.

Ingredients
2 ready-to-roll puff pastry
oil of choice
1 brown onion, finely chopped
½ tsp chilli powder
¾ tsp salt
½ tsp garam masala
½ tsp amchoor /dried mango powder
3 red potatoes, roughly chopped and boiled
2 tbsp fresh coriander leaves, finely chopped
plain flour to sprinkle
2 eggs whisked

Method
– Preheat the oven to 190°C / 170°C with a fan.

– Add 2 tbsp oil to a hot pan. Add the onions and cook for 4-5 minutes.

– Add the chilli powder, salt, garam masala, and amchoor powder. Mix well.

– Finely chop the boiled potatoes and add them to the pan along with the coriander. Mix well and cook on high heat for 2 minutes. Turn off the heat and let it cool for 5 minutes.

– Sprinkle some flour onto your worktop and roll out 1 puff pastry. Slice into 8 equal portions.

– Add 1 tbsp of potato filling to 1 end of each portion. Thinly spread some egg around the edges of the pastry. Fold the pastry in half and press to seal.

– Place the puffs on a baking tray and spread some egg on top of each one.

– Repeat the process with the remaining ingredients and place in the oven for 20-25 minutes.

– Remove them from the oven and let them cool slightly before you tuck in!
