Paneer Sandwich

If you don’t know what paneer is, it’s an Indian cheese which can be pretty bland. But this makes it the perfect sponge to soak up lots of flavour and create the most delicious sandwich.
This recipe makes 2 sandwiches.

1 brown onion, finely chopped
1 green chilli, finely chopped
small handful fresh coriander
pinch of salt
pinch of chilli powder
pinch of black pepper
100g grated paneer
100g grated cheddar cheese
1 tbsp olive oil
½ tsp Mustard seeds
sourdough slices

– Place the onion, green chilli, coriander, paneer and cheddar in a bowl. Mix well.

– Add the salt, pepper, chilli powder and mix well.

– Spread a little butter onto one side of each slice of bread.

– Place the filling onto one slice of bread and place the other on top.

– Heat the olive oil in a large frying pan. Add the mustard seeds and let them sizzle.

– Add the sandwich to the pan and cook on medium-high heat for 3-4 minutes on each side or until golden brown and the filling has melted.

– Transfer to a plate, slice in half and tuck in!
