Ingredients
2 tbsp cornflour
2 tbsp plain flour
salt
½ tsp kashmiri chilli powder
½ tsp black pepper
3 tbsp rice flour
½ tsp chaat masala
oil of choice
225g paneer, cut into thick wedges
2 tbsp mayonnaise
2 tsp sriracha
Method
– Mix the cornflour, pain flour, ½ tsp salt, black pepper, and chilli powder, in a large bowl. Add 5 tbsp water and mix to form a pancake-like batter.
– Mix the rice flour, ¼ tsp salt, and chaat masala in a shallow bowl.
– Heat 1 cup oil to 160°C in a deep frying pan.
– Use one hand to dip the paneer into the batter and then place it in the rice flour. Then, use the other hand to roll it in the rice flour, and then transfer to a plate. Repeat this process with the rest of the paneer.
– Carefully drop the paneer into the hot oil and fry until golden. Regularly stir and make sure all sides are cooked evenly. Then, use a slotted spoon to transfer the paneer chips onto a kitchen roll-lined plat to remove any excess oil.
– Prepare the dip by mixing the mayonnaise and sriracha in a bowl.
