Palak Paneer

This super easy recipe is my own take on the popular Palak Paneer. With the addition of cavolo nero, this dish is nourishing and wholesome, and great for the whole family.
Serves 4 people.

Ingredients
200g spinach
200g cavolo nero
ghee/oil of choice
2 garlic cloves, finely chopped
1 tsp salt
1 tsp chilli powder
225g paneer, chopped into cubes
1 tbsp double cream

Method
– Place the spinach and cavolo nero in a hot pan with 200ml water. Cover and cook for 5 minutes until the leaves have wilted.

– Transfer the greens to a blender and blitz to a purée.

– Add 1 tbsp ghee to a hot pan. Add the garlic and cook for 1 minute.

– Add the purée and mix. Cover and cook on low heat for 5-7 minutes.

– Add the salt, chilli powder, paneer, and double cream. Mix well and cook for 2 minutes.

I like to serve mine with piping hot basmati rice!
