Onion Masala Dal

I’m using moong dal to create this delicious vegan dal.
Serves 4

Ingredients
2 brown onions, thinly sliced
400g moong dal
salt
turmeric powder
oil of choice
pinch of asafoetida
2 red chillies
1 tsp amchoor powder
1 tsp garam masala

Method
– Place the dal in a pan and cover in 1200ml water. Add salt and turmeric powder and bring to a boil. Cover and cook for 1 hour. Alternatively, cook them in a pressure cooker until it whistles 3 times.

– Add 2 tbsp to a hot pan. Add the asafoetida, red chillies, and the onions. Cook for 7-8 minutes until golden.

– Add the amchoor powder and garam masala. Stir through and turn off the heat.

– Add 400ml water to the lentils once they are cooked. Transfer them to a large serving bowl. Place the cooked onions on top.

Serve with piping hot chapatis!
