Onion Bhaji Burger

This is an absolutely delicious veg burger made with onion bhaji or onion pakora. You can make it vegan by removing the egg.
Makes 2 burgers

Ingredients
2 burger buns
oil of choice
¼ cucumber, finely sliced
1 tomato, finely sliced
handful salad leaves
butter
2 runny fried eggs
sriracha

For the Bhaji
1 large red onion, thinly sliced
100g gram flour
1 garlic clove, grated
small handful fresh coriander leaves, finely chopped
½ tsp garam masala
½ tsp chilli powder
½ tsp chaat masala
¼ tsp salt
1 tbsp rice flour

Method
– Place all the ingredients for the bhaji in a large bowl. Mix well.

– Add 2 tbsp water and mix.

– Add 1 cup oil to a hot pan. Once piping hot, take a palm sized portion of the onion mixture and carefully drop it into the oil. Flip after 2-3 minutes and cook for another 2-3 minutes until golden. Transfer to a kitchen roll-lined plate to remove any excess oil. Repeat the process with the rest of the mixture.

– Lightly butter the buns.

– To assemble the burger add a layer of salad leaves, cucumber, and tomato. Place the bhaji on top, then add the egg. Drizzle on some sriracha and place the other half of the bun on top.
