Onion and Tomato Pasta

Straight forward but deeply delicious. You just need a little bit of time to fully bring out the rich flavours.
This recipe serves 4 people.

Ingredients
8 red onions, thinly sliced
1 red chilli, roughly chopped
500g dried pasta
olive oil
salt
black pepper
½ tsp sugar
300g passata
350g rigatone pasta

Method
– Add 3-4 tbsp of olive oil to a hot pan. Add the red chilli and red onions.

– Add ½ tsp salt and ½ tsp sugar. Cook for 15 minutes until the onions are softened.

– Add the passata. Stir through and cook for 10 minutes.

– Meanwhile, bring a large pan of water to a boil. Add 2 tbsp salt and the dried pasta, and cook for 12-15 minutes.

– If the tomato and onion sauce is becoming too sticky, just add 2 tbsp of pasta water.

– Once the pasta is cooked, transfer it to the sauce, along with 2 tbsp of pasta water.

– Add a generous sprinkling of black pepper and parmesan cheese.
