One Pan Chicken and Bean Bake

This is a delicious, comforting, and healthy dinner with chicken and beans. Easy to prepare this is absolutely delicious with some rice or salad. Enjoy!
Serves 4 people.

4 chicken thighs on the bone
oil of choice
2 red peppers, thinly sliced
2 brown onions, thinly sliced
6 garlic cloves, finely chopped
3 green chillies
200ml red wine
500g passata
1 tsp salt
1 ground white pepper
400g red kidney beans, rinsed
handful fresh coriander leaves, roughly chopped

– Preheat the oven to 180°C / 160°C with a fan.

– Add 2 tbsp oil to a hot, large oven-proof pan. Add the chicken, smooth side down. Cook for 4-5 minutes. Flip them over and cook for 2 minutes. Transfer to a plate.

– In the same pan, add the onion and peppers. Cook for 5-7 minutes.

– Add the garlic and cook for 5 minutes.

– Slit the chillies and add them to the pan. Mix well.

– Add the red wine. Mix well and simmer for 2 minutes.

– Add the passata, salt, pepper, red kidney beans, and 100ml water. Mix well.

– Add the chicken and make sure it is covered in the sauce. Cover and place in the oven for 30 minutes.

– Remove the lid and cook for 15 minutes.

– Remove the pan from the oven and serve. Garnish with some fresh coriander.
