Mushroom Cheese Sandwich

Even though my kids dislike mushrooms they would happily devour this delicious sandwich. Mushrooms and cheese are a match made in heaven.
This recipe makes 1 sandwich.

2 tbsp olive oil
1 tsp cumin seeds
1 red onion, roughly chopped
3 garlic cloves, chopped
1 red chilli, chopped
300g chestnut mushrooms, sliced
black pepper
ground cumin
25g cheddar cheese, grated
25g cheddar cheese, sliced
sourdough slices
chilli oil

– Heat the oil in a large pan. Add the cumin seeds and let them sizzle.

– Add the red onion and cook for 5 minutes until softened.

– Add the garlic, red chilli, and mushrooms. Cook for 10 minutes until there is no moisture left.

– Transfer to a bowl and add a pinch of salt, black pepper, and ground cumin. Mix well.

– Add the grated cheese and stir to combine.

– Heat 1 tbsp oil in a shallow frying pan. Add 1 slice of sourdough and then a generous helping of the mushroom mixture. Top with a few cheddar slices and the other slice of bread.

– Toast for 4 minutes on each side until golden and the filling has melted. Time to tuck in!
