Mum’s Alu Ghobi

This authentic, Punjabi style recipe is a classic and must try! 
Serves 6

Ingredients
1 cauliflower, roughly chopped
2 medium potatoes, roughly chopped
oil of choice
1 tsp cumin seeds
1 brown onion, roughly chopped
2 green chillies
2 large tomatoes, roughly chopped
4 garlic cloves, finely chopped
1” piece of ginger, finely chopped
2 tsp ground coriander
1 tsp salt
1 tsp chilli powder
1 tsp turmeric powder
½ tsp garam masala
small handful fresh coriander, roughly chopped

Method

– Add 3-4 tbsp of oil to a hot pan. Add the cumin seeds and green chillies, and let them sizzle.

– Add the onion and cook for 5 minutes until lightly golden.

– Add the garlic and ginger and cook for 2 minutes. Add the tomatoes and cook for another 8-10 minutes until the tomatoes have softened.

– Add the ground coriander, salt, chilli powder, and turmeric powder. Mix well.

– Add the potato, cauliflower, 1 tbsp of water. Cover, and cook on medium heat for 12 minutes.

– Remove the lid, and cook on high heat for 2 minutes.

– Add the garam masala and fresh coriander. Stir through and then transfer to a serving plate.

Serve with some piping hot basmati rice!

  1. Potatoes & cauliflower not anywhere near cooked after 12 minutes with lid on in a cast iron pot. I double checked the video and potatoes weren’t precooked. It smells divine.

  2. Delicious! Thanks to your mum for sharing the recipe! I like my cauliflower a bit on the soft side, so I cooked it for 20 minutes (rather than the 12 min ).

  3. It’s lovely seeing your mum cutting up the cauliflower stalk, I often wonder how to use the leaves and stem so knowing this is something that can be done is really useful

  4. Love the recipe. But I think I needed to cut the potatoes and the cauliflower much smaller to get them to cook in 12 mins. I was still cooking them 30 mins later and still not fully cooked through.
    Did taste delicious however when I did eat it!
