Matar Paneer

Indulge in the comfort of an easy and delicious peas and paneer curry, perfect to enjoy with rice or roti. Ingredients
oil of choice
2-3 onions, roughly chopped
2 garlic cloves, grated
1″ fresh ginger, grated
400g chopped tomatoes
1 tsp cumin seeds
1½ tsp salt
1 tsp turmeric powder
1 tsp chilli powder
1 tsp garam masala
1 tbsp ground coriander powder
450g paneer, cubed
300g frozen peas
½ tsp sugar
1 tbsp double cream (optional)
handful fresh coriander, roughly chopped

Method
– Add 2 tbsp of oil to a hot pan. Add the onions and cook on medium heat until golden.

– Add the garlic and ginger, and cook for 1 minute.

– Add the tomatoes and mix well. Cover and cook on low heat for 10 minutes.

– Transfer to a blender and blitz to a purée.

– In the same pan, add 1 tbsp oil. Add the cumin seeds and let them sizzle for 30 seconds.

– Add the purée, salt, turmeric, chilli powder, garam masala, and ground coriander. Mix well, cover, and cook on low heat for 10 minutes.

– Add the paneer, peas, and 100ml water. Mix well, cover, and cook for 10 minutes.

– Add the sugar and double cream. Mix and serve with a garnish of fresh coriander.
