Elevate your midweek dinner with this quick and healthy curry that’s ready in minutes and tastes amazing. Whether you opt for fresh or frozen peas, and choose Maris Piper or any good potatoes, this dish is a winner. Pair it with naan or rice for a delightful and satisfying meal!
Serves 4.

Ingredients
oil of choice
1 tsp cumin seeds
1 tsp black mustard seeds
2 onions, roughly chopped
2 garlic cloves, finely chopped
1cm fresh ginger, finely chopped
4 tomatoes, roughly chopped
4 red potatoes, peeled and roughly chopped
1½ tsp salt
1 tsp turmeric powder
½ tsp chilli powder
1 tsp garam masala
1 tbsp ground coriander powder
300g frozen peas
handful fresh coriander leaves, roughly chopped

Method
– Add 1½ tbsp of oil to a hot pan. Add the cumin seeds and black mustard seeds. Let them sizzle for 30 seconds.

– Add the onions and cook on medium heat for 10-12 minutes until golden.

– Add the garlic and ginger, and cook for 1 minute.

– Add the tomatoes and mix well. Cover and cook on low heat for 10 minutes.

– Add all the spices, the potatoes, peas, and 500ml boiling water. Mix well, and bring it to a boil on high heat.

– Lower the heat, cover, and cook for 15 minutes.

Garnish with the coriander and serve!
