Masala Omelette Sandwich

This is a spicy and savoury treat, combining a flavourful Indian-style omelette with fresh ingredients between toasted ciabatta slices.
This recipe makes 1 sandwich.

½ red onion, finely chopped
1 green chilli, finely chopped
handful fresh coriander
½ chopped tomato, finely chopped
2 eggs
pinch of salt
pinch of chilli powder
olive oil
1 red onion, thinly sliced
pinch of salt
pinch of chilli powder
squeeze of lemon juice
ciabatta to serve

For the Dressing
2 tbsp mayonnaise
1 tsp chilli oil

– Whisk the eggs in a large bowl.

– Add the chopped onion, green chilli, coriander, and tomato. Mix well.

– Heat 3 tbsp oil in a large frying pan. Pour in the egg mixture and cook for 5 minutes

– Slice your ciabatta in half. Heat 1 tbsp oil in a pan. Add the ciabatta and toast all sides until golden and crispy.

– Place the red onion slices in a bowl. Add a pinch of salt, chilli powder, and the lemon juice. Mix well.

– Prepare the dressing by mixing the mayonnaise and chilli oil in a small bowl.

– Assemble the sandwich by spreading the dressing onto the inside of one slice of bread. Add the omelette and red onion.

– Top with the other slice of bread and serve!
