Lentil Paratha

This is one of my mums delicious recipes. I have always enjoyed these parathas made by her and now my kids love them too. These parathas are a great way to use any leftover lentils or tadka dal that you might have in the fridge. And they taste great on there own with some butter, pickle or chutney.
Makes 8 paratha.

Ingredients
300g chapati flour
¼ tsp salt
4 tbsp cooked lentils
oil/ghee

Method

– In a large bowl, add the flour, salt, and lentils. Mix well.

– Add a splash of water a little at a time and stop when you have got a nice soft dough.

– Once the dough has come together, knead it for 30 seconds until smooth.

– Add some flour to a bowl. Tear off a lime-size portion from the dough and roll it into a ball.

– Roll the ball of dough in the flour to lightly coat it. Then, use a rolling pin to flatten the ball into a palm-sized circle.

– Spread a thin layer of ghee on top. Then, fold it in half, and half again.

– Roll the dough in some flour and then flatten again with a rolling pin.

– Heat your pan on medium heat.

– Add the paratha to the pan and cook for 2 minutes on each side. Then, lightly spread some ghee onto both sides and cook for 1 minute on each side until golden and crispy.

– Repeat with the rest of the dough.

Serve with a main dish or as a tasty snack!
