We’re in the kitchen with my mum again! Her delicious vegetarian curry is one that would please your family and friends and I’m sure, like me, you’ll go back to it again and again.
Serves 4 people.
Ingredients
oil of choice
2 garlic cloves, finely chopped
1 green chilli, finely chopped (optional)
3-4 brown onions, roughly chopped
3 medium tomatoes, roughly chopped
400g paneer
1 brown onion, roughly cubed
1 green pepper, roughly cubed
1 tsp salt
1 tsp chilli powder
1 tsp turmeric powder
1 tsp ground coriander
1 tsp garam masala
1 tsp ground cumin
50ml milk
pinch of sugar
1 tbsp dried fenugreek leaves
Method
– Place the paneer in a bowl. Cover in boiling water and let it soak for 10 minutes to soften. Chop into bite-size cubes.
– Add 2 tbsp to a hot pan. Add the garlic and cook for 2 minutes.
– Add the green chilli and onions. Cook for 10-12 minutes until golden.
– Add the tomatoes. Cook for 6-8 minutes until soft. Transfer to a blender and blitz to a purée.
– In the same pan, add 2 tbsp of oil. Add the cubed onion and green pepper. Cook for 5 minutes.
– Add the purée, mix well and cook on high heat for 2 minutes.
– Add the salt and all the spices. Mix well.
– Mix 50ml of milk with 50ml water. Pour this into the pan.
– Add the sugar, fenugreek leaves, and paneer. Mix well and cook for 2-3 minutes.
