Irish Cream Hot Chocolate

This is my favourite hot chocolate recipe for the season. Cardamom, Irish cream and double cream on top, what more could you want?

Ingredients for 1 cup
120ml whole milk
120ml oat milk
3 cardamom pods
50ml double cream
2 tsp light brown sugar
25g dark chocolate (70%), roughly chopped
1 tsp cocoa powder
1 tbsp Irish cream.

Method
– Add your milk to a pan.

– Peel your cardamom pods and place them in a pestle and mortar. Mash them up and place them in the milk. Bring the milk to a simmer.

– Add the double cream and 1 tsp sugar to a bowl and whisk to form soft peaks. Set aside.

– Add 1 tsp of sugar and the chocolate to the milk. Stir to combine.

– Add the cocoa powder. Stir to combine.

– Turn off the heat and add the Irish cream. Mix well.

– Pour the hot chocolate through a sieve into your favourite mug. Top with the whipped cream and enjoy!
