Homemade Pizza

This pizza dough is super simple to make. My favourite topping is chicken and sweetcorn but feel free to top it with whatever you like.
Recipe makes 4 pizza bases.

Ingredients
For the Dough
450g strong white flour
50g fine semolina
7g salt
7g yeast
320ml water, luke warm

For the Topping
400g chopped tomatoes
2 garlic cloves
200g sweetcorn
2 roast chicken breasts, shredded
2 mozzarella balls, shredded
200g cheddar, grated

Method
– Place all of the dry ingredients for the dough in a large bowl. Then, slowly pour in the water whilst you mix with your hands.

– Transfer the dough to a stand mixer with the dough hook attachment. Knead the dough for 7-8 minutes.

– Place the dough on your worktop, divide into 4 portions and roll them into balls.

– Lightly dust 2 baking sheets with flour and place 2 dough balls on each. Cover in a clean, damp tea towel, and let it rest for 2 hours.

– Preheat the oven to 220°C / 200°C with a fan.

– Place the chopped tomatoes and garlic into a blender, and blitz to form a purée. Transfer to a bowl and set aside.

– Lightly dust your worktop in flour. Take 1 dough ball and stretch it out into a thin pizza base. You can use a rolling pin if easier.

– Transfer to a pizza tray and add 4 tbsp of the tomato purée. Use the back of a spoon to spread it to the edges.

– Sprinkle over some sweetcorn, chicken, a pinch of salt, mozzarella, and cheddar. Place the pizza in the oven for 15 minutes.

– Repeat the process with the rest of the ingredients.
