This is one of my favourite breakfast treats! A magical, popular Indian street food dessert, which I’m going to teach you to make at home. Prepare the night before to be enjoyed in the morning.
Ingredients
500ml sunflower oil
For the Batter
150g plain flour
1 tbsp gram flour
½ tsp yeast
For the Syrup
200g granulated sugar
250ml water
small pinch of saffron
¼ tsp ground cardamom
Method
– Add the plain flour, gram flour, and yeast to a large. Give it a quick mix with a whisk.
– Add 160ml of water, whisk thoroughly until it forms a smooth paste. Leave it to rest overnight.
– With a spoon, give it a good mix. Then, transfer the batter into a piping bag.
– In a large pan, add the sugar, water, saffron, and ground cardamom. Mix well, and boil for 5-6 minutes.
– Add plenty of oil to another large pan and bring it to 160°C.
– Once the oil is hot, pipe swirls of batter into the pan. Cook until golden on both sides, remove from the pan of oil and place them in the syrup to soak for 2 minutes.
