Harissa Mango Chicken Sandwich

This one recipe you don’t want to miss! The tantalising blend of spicy harissa-marinated chicken, paired with sweet and juicy mango slices, creating a vibrant and satisfying combination of flavours in every bite.
This recipe makes 2 sandwiches.

2 tbsp harissa paste
4 garlic cloves, chopped
4 chicken thighs, skinless and boneless
2 tbsp olive oil
1 red onion, thinly sliced
1 mango, thinly sliced
pinch of pepper
chilli flakes
4-5 tbsp yoghurt
brioche buns

– Place the harissa paste, garlic, and a pinch of salt in a large bowl. Mix well.

– Add the chicken and massage the mixture into the thighs. Let them sit for at least 30 minutes.

– Heat 2 tbsp oil in a frying pan. Add the chicken and cook for 6-8 minutes. Flip halfway.

– Mix the red onion, mango and yoghurt with a pinch of salt, pepper, and chilli flakes in a bowl.

– Slice your brioche buns in half. Add 1 heaped tablespoon of mango yoghurt mixture and top with the chicken.

– Close the sandwich and enjoy!
