Halloumi and Garlic Frittata

This is an absolute winner, with stunning flavours of wild garlic, red onions, potatoes and halloumi this tastes amazing and really easy to make as well.

Ingredients
oil of choice
1 large red onion, thinly sliced
1 large red potato, chopped into small pieces
225g halloumi, cubed
large handful wild garlic, rinsed and roughly chopped
salt
chilli powder to taste
8 eggs
¼ tsp black pepper
large handful grated cheese

Method
– Add 2 tbsp oil to a hot, oven-proof pan. Add the onions and cook for 10 minutes.

– Place the potatoes in a pan, cover in water, and bring to a boil. Cook for 5-6 minutes

– Add the wild garlic and halloumi to the onions. Mix well and cook for 5 minutes.

– Add the potatoes, ½ tsp salt, and chilli powder. Mix well and cook for 5 minutes.

– Crack 8 eggs into a bowl and add ½ tsp salt, chilli powder, and black pepper. Whisk well.

– Transfer the onion and potato mix into the eggs. Stir through.

– Heat 1 tbsp oil to the same pan. Then, pour the egg and potato mixture back into the pan. Cook on low heat for 8 minutes.

– Turn on the grill. Sprinkle the cheddar on top of the eggs and then place it under the grill for 8 minutes.

– Remove it from the oven and then place a large plate on top of the pan and carefully flip it over.

– I like to serve mine with a fresh garden salad.
