A few years ago I was lucky enough to go to a restaurant in London where I learnt how to make proper falafel and I thought I would share the recipe with you.
Ingredients
400g chickpeas, tinned or soaked overnight
1-2 green chillies, roughly chopped
1 brown onion, roughly chopped
3 garlic cloves
large handful parsley, roughly chopped
handful fresh coriander leaves, roughly chopped
1 tbsp ground cumin
1 tsp ground coriander
¾ tsp salt
¼ tsp baking powder
3 tbsp gram flour/chickpea flour
oil of choice
Method
– Place the chickpeas, chillies, onion, garlic, parsley, and coriander into a blender. Blitz to for a coarse paste.
– Transfer the mix to a large bowl. Add ground cumin, ground coriander, salt, baking powder, and flour. Mix well.
– Heat 2 cups of oil in a deep frying pan. Take a lime-sized portion of the chickpea mixture and roll it into an egg shape. Drop it in the oil and repeat this process with the rest of the mixture. Cook them on low-medium heat until dark golden brown.
– Use a slotted spoon to remove them from the oil and place them on a kitchen roll line plate to remove any excess oil.
Enjoy with, pita bread, hummus, and my aubergine dip!
