Fried Chicken

A simple, tasty classic which is sure to please the whole family.
Serves 4

Ingredients
8 drumsticks
1 tsp salt
1/2 tsp turmeric powder
1 tbsp ground coriander powder
1/2 ground cumin
1 tbsp chilli powder
1/4 tsp ground black pepper
2 garlic cloves, grated
1 inch ginger, grated
1 egg
2 tbsp natural yoghurt
2 tbsp cornflour
2 tbsp plain flour
oil of choice

Method
– Place the salt, turmeric powder, ground coriander powder, ground cumin, chilli powder, and black pepper in a bowl. Mix well.

– Add the garlic, ginger, eggs, and yoghurt. Mix well.

– Place the chicken in a large bowl and pour over the spice and yoghurt mix. Use your hands to massage the mix onto all the chicken pieces. Cover, and let it marinade for 1 hour.

– In another bowl, mix the cornflour, and flour with a pinch of salt. Pour this over the chicken and massage it in.

– Add 2 cups of oil to a deep pan and heat until simmering. Add 2 piece of chicken and fry on low-medium heat for 12 minutes. Make sure to turn regularly to get an even colour. Once cooked, transfer to a kitchen roll lined plate to remove any excess oil. Repeat the process with the remaining chicken.

– Let the chicken cool down slightly before you fry them for a second time on a high heat for 2 minutes.
