Fish Finger Sandwich

Fish finger sandwiches are a timeless classic, combining crispy fish fingers with fresh ingredients in your favourite bread for a simple yet delicious lunchtime bite.
This recipe makes 1 sandwich.

2 slices of white bread
4 fish fingers
small handful salad leaves
chilli oil
1 gherkin sliced lengthways

For the Dressing
4 tbsp mayo
1 tbsp capers, roughly chopped
pinch of salt
pinch of pepper
½ gherkin finely chopped
small handful fresh coriander, finely chopped

– Cook the fish fingers according to packet instructions.

– Meanwhile prepare the dressing by placing the ingredients in a small bowl and mixing well.

– Spread the dressing onto one slice of bread. Top with the salad leaves, gherkin slices, fish fingers, and a drizzle of chilli oil.

– Add the other slice of bread and serve!
