Chosen for you by my son, this recipe is easy, tasty and a great one to try with the kids!
Ingredients
handful frozen sweetcorn
120g pasta
½ red bell pepper, roughly chopped
3 tbsp mayonaise
salt
ground black pepper
extra virgin olive oil
1 tin of chickpeas
½ block of feta cheese
Method
– Fill a medium-sized pan with water and 3 tsp of salt, bring to a boil, and add the pasta. Cook for 9-11 minutes.
– Fill a small-sized pan with water, bring to a boil and add the frozen sweetcorn. Cook for 5 minutes.
– Once the pasta and sweetcorn are cooked, drain the water, place them both in a large bowl and let it cool.
– When the pasta is cool, add the red bell pepper.
– For the dressing, mix the mayonnaise, 1 tsp salt, a generous pinch of ground black pepper, and a drizzle of extra virgin olive oil in another bowl.
– Drain and rinse the chickpeas and add to the pasta.
– Crumble the feta cheese into the bowl and add the dressing. Mix well.
Option to garnish with a drizzle of chilli oil, serve and enjoy! Perfect for a packed lunch or even at home.
