Egg Biryani

Seems like you all love Biryani so in this recipe I’m going to teach you how to make a delicious vegetarian biryani which is ready in minutes! Perfect for those midweek meals where you don’t know what to make.
Serves 4 people.

Ingredients
oil of choice
2 tsp cumin seeds
8 cloves
2 bay leaves
1 cinnamon stick
6 green cardamom pods
3 medium onions, roughly chopped
3 medium tomatoes, roughly chopped
1 tsp garam masala
1 tsp salt
½ tsp turmeric powder
½ tsp chilli powder
3 tbsp natural yoghurt
4 brown onions, thinly sliced
300g rice, washed
6 large eggs, hard-boiled and peeled

Method
– Add 3 tbsp of oil to large hot pan. Add 1 tsp cumin seeds, 4 cloves, bay leaves, cinnamon stick, and 4 green cardamom pods, and let them sizzle for 1 minute.

– Add the onions and cook for 10-12 minutes until golden.

– Add the tomatoes and cook for 5 minutes.

– Add the garam masala, salt, turmeric powder, and chilli powder. Mix well and cook for 5 minutes.

– Add the natural yoghurt, mix well, and cook for 5-7 minutes.

– Add 1 cup of oil to a hot deep frying pan. Add the sliced onions and cook until golden. Transfer to a sieve and place over a bowl to let the excess oil drip. Set aside.

– Cover your rice in water with 1 tsp cumin seeds, 4 cloves, and 2 green cardamom pods. Cook until it is nearly ready but still has a bite.

– Halve your boiled eggs. Add 1 tsp of oil to a hot pan. Fry the halves for 2 minutes on each side.

– To assemble the biryani, brush a large deep pan with oil. Add a layer of fried onions to the base, then top with half the rice, then half the tomato mixture, then half the eggs. Repeat the process with the rest of the ingredients.

– Cook on low heat for 10 minutes.
