As Pancake Day eagerly approaches, why not spice up your celebration with a lightning-fast and foolproof pancake recipe? Let the kids join in on the fun, and once those golden beauties are cooked to perfection, unleash your creativity with a myriad of scrumptious toppings.

150g self-raising flour
250ml whole milk
1 egg
½ tsp vanilla extract
100g blueberries (optional)
toppings of choice


– Place all the ingredients (except the butter) in a large bowl and whisk to combine.

– Add 1 tsp butter to a hot pan. Pour a large spoonful of mixture onto the centre of the pan. When it starts to bubble, then flip it over and cook for 2 more minutes. Transfer to a plate.

– Repeat the process with the remaining ingredients.

– Garnish with your favourite toppings like golden syrup, nutella, or bananas.
