Ingredients
oil of choice
250g red lentils, washed
1 tsp turmeric powder
salt
1 tsp ground cumin
400ml coconut milk
700ml water
1 leek, roughly chopped
1 brown onion, roughly chopped
1 tbsp chilli oil
Method
– Add the red lentils, turmeric powder, 1 tsp salt, ground cumin, coconut milk, and 700ml water to a saucepan. Cook for 15 minutes.
– Add 2-3 tbsp of oil to a hot pan. Add the leeks and onions, and cook for 5-6 minutes until soft.
– Add a pinch of salt and chilli oil. Mix well and turn off the heat.
– Transfer the dal to a serving bowl and pour the leeks and onions on top.
