Delicious Turkey Curry

This is a simple easy turkey curry recipe but can also made with any leftover roast meats you might have, like chicken and lamb. I used a Thermomix to make this as it is a really amazing smart kitchen gadget but this can also be made on the hob normally.

Ingredients
2 onions, roughly chopped
1 tbsp sunflower oil
¼ tsp salt
1 tin chopped tomatoes
½ tsp sugar
½ tsp salt
1 tsp turmeric powder
1 tsp garam masala
2 tsp ground coriander
1-2 tsp chilli powder to taste
1 tsp dried fenugreek leaves (not seeds)
2 tbsp double cream
450g leftover roast turkey
200ml water

Method
– Add onions to the Thermomix and programme it to chop the onions for 3 seconds.

– Add oil and salt to the mixer and programme to cook for 8 minutes at 120°c.

– Add tomatoes and sugar and cook for 20 minutes at 100°c on speed 1.

– Add the spices and stir through.

– Add the turkey and water and cook for 10 minutes at 100°c on speed 1.

– Serve with a sprinkling of fresh coriander leaves and rice, chapati, naan or parathas.

This can be made on a hob in the same way and can use any leftover meats.
