Courgette Onion Pakora

The rice flour makes this super easy pakora so crispy! Eat with coriander chutney or even on sliced white bread with mayo and ketchup!

Ingredients
2 fresh baby courgettes
2 garlic cloves
1 red onion, chopped
1 green chilli, sliced
½ tsp chilli powder
½ tsp salt
6 tbsp gram flour (70g)
Sunflower oil
4 tbsp/50g rice flour

Method
– Slice ends off the courgettes and coarsely grate into a bowl.

– Add grated garlic, red onion, green chilli, chilli powder, salt and gram flour to absorb some of the moisture (add extra flour if needed). Add chopped green chillies if you have them too.

– Heat sunflower oil in a pan.

– Slightly squash a portion of the mix in your hands and then carefully lower into the hot oil and cook in batches.

– Turn heat to low once bubbling to give it time to cook for a couple of minutes.

– Once they are golden, turn over to cook the other side.

– Once cooked, drain on some kitchen roll.
