These super delicious coffee chocolate cupcakes are topped with nutella cream and sprinkled with crunchy walnuts. You can impress your family and friends with these amazingly quick and easy cupcakes.
Ingredients
125g unsalted butter, softened
125g caster sugar
125g self-raising flour
2 large eggs
2 tbsp of coffee granules mixed with 1 tbsp hot water, cooled
2 tbsp milk
50g chocolate chips
For the Buttercream
150g unsalted butter, softened
300g icing sugar
2 tbsp nutella
2 tbsp double cream
50g walnuts, chopped
Method
– Preheat the oven to 180°C / 160°C with a fan. Grease and line a 12-hole cupcake tin.
– Place the butter, sugar, flour, eggs, and coffee in a stand mixer. Whisk for 2 minutes.
– Add as much milk as necessary to get a smooth and creamy mixture.
– Pour in the chocolate chips and use a spoon to fold them in.
– Evenly distribute the mixture between the cases. Bake in the oven for 20-25 minutes.
– To prepare the buttercream, place the butter in the stand mixer and whisk until smooth.
– Gradually add the icing sugar while you continue to whisk.
– Add the nutella and cream. Whisk to combine.
– Transfer the buttercream to a piping bag with star nozzle.
– Remove the cupcakes from the oven and allow them to cool completely before you pipe the buttercream on top.
– Decorate with the chopped walnuts and serve!
