Classic Cauliflower Ghobi Alu Sabji

I come back to this recipe again and again! It’s a quick and healthy dinner for all the family, ready in under 30 minutes!

Ingredients
sunflower/vegetable oil
1 cauliflower
2 medium onions, roughly chopped
2 garlic cloves, grated
1 thumb-sized piece of ginger, grated
1 tsp cumin seeds
2 large tomatoes, roughly chopped
2 red potatoes, roughly chopped
1 tsp chilli powder
1 tsp salt
1 tsp turmeric powder
2 tsp ground coriander
1 tsp garam masala
1 small handful of fresh coriander, finely chopped
1 small handful of fresh mint, finely chopped

Method
– Remove the leaves from the cauliflower and roughly chop it into pieces.

– Add 2-3 tbsp oil, and cumin seeds, to a hot pan. Let it sizzle.

– Add the onions and cook for 7-8 minutes until lightly golden.

– Add the tomatoes and stir through. Cook for 2 minutes.

– Add the chilli powder, salt, turmeric powder, ground coriander, and garam masala. Mix well.

– Add 3-4 tbsp of water, the cauliflower, and the potatoes. Stir through, cover, and cook on low-medium heat for 10-15 minutes.

– Once the potatoes are cooked, add the fresh coriander and mint.

Option to garnish with a sprinkling of amchoor powder, or chaat masala.

Serve with rice and papad, or even in a wrap for lunch!
