These are very simple chocolate cookies with pecan nuts and are amazing! They can be made in about half an hour. They’re all squidgy inside and are so chocolatey. They’re great as gifts for friends and family.
Ingredients
120g unsalted butter
100g caster sugar
100g soft brown sugar
1 egg
1 tsp vanilla extract
275g plain flour
25g cocoa powder
Pinch salt
1 tsp bicarbonate of soda
100g dark chocolate chips
50g pecan nuts, roughly chopped (or walnuts)
Method
– Preheat the oven to 180°C / 160°C with a fan.
– Beat sugars and butter together until creamy and smooth.
– Add egg and vanilla extract and mix.
– Add the flour, cocoa powder, salt and bicarbonate of soda and mix together with a wooden spoon.
– Add the chocolate chips and pecans and mix together by hand to create a dough.
– Line a baking tray with some baking paper.
– Take a lime-sized portion from the dough and roll into a ball.
– Place each ball on the tray, well-spaced as they will spread when baked.
– Top each ball with a whole pecan nut (or walnut).
– Bake for 13-14 minutes.
– Let them rest for a couple of minutes as they will be quite soft when cooked.
– Carefully, transfer to a cooling rack to cool.
Serve or box up to gift to friends.
Those are absolutely fantastic Chetna! I’ve already made them twice and gave them away as gifts to friends! I use hazelnuts instead of pecans 😉
