Chocolate and Custard Mince Pies

These super delicious mince pies are filled with creamy custard, almonds and chocolate mince meat. The flaky pastry adds crispness to the pies. These are melt in the mouth when eaten warm or cold.

200g custard
40g ground almonds
170g mincemeat
40g chocolate chips
320g ready-rolled puff pastry
8” cookie cutter
flaked almonds 

– Preheat the oven to 200°C / 180°C with a fan. Grease a 12-hole cupcake tray.

– Mix the custard and ground almonds in a small bowl.

– Mix the mincemeat and chocolate chips in another bowl.

– Lightly dust your worktop with flour. Carefully roll out the pastry. Use a rolling pin to thin it out slightly.

– Use the cookie cutter to cut out 12 rounds. Place these in the cupcake tray.

– Fill each round with 1 tsp custard and then 1 tsp mincemeat. Top with a few flaked almonds.

– Bake in the oven for 10-12 minutes.

Best served warm with a dusting of icing sugar!
