Chilli Paneer

Enjoy a simple and quick comfort meal that’s sure to be a family favorite. Give it a try with some egg fried rice if you fancy.
Serves 4 people.

Ingredients
oil of choice
1 red chilli, finely sliced
1 green chilli, finely sliced
3 garlic cloves, grated
1″ fresh ginger, grated
2 red onions, roughly chopped
handful spring onions, roughly chopped
1 red pepper, roughly chopped
1 green pepper, roughly chopped
1 yellow pepper, roughly chopped
1 ½ tbsp soy sauce
½ tbsp vinegar
2 tbsp chilli and garlic paste
1 tbsp red chilli sauce
1 ½ tbsp cornflour

For the Paneer
400g paneer, cubed
2 tbsp cornflour
½ tsp chilli powder
½ tsp black pepper
½ tsp salt

Method
– Place all the ingredients for paneer in a bowl. Mix well.

– Heat 1 cup of oil in a frying pan. Add the paneer and cook until golden. Transfer to a kitchen roll-lined plate to remove any excess oil.

– Add 2 tbsp to a large, hot frying pan. Add the red and green chilli. Let is sizzle for 30 seconds.

– Add the ginger and garlic. Cook for 30 seconds.

– Add the red onion and cook on high heat for 2 minutes.

– Add the spring onions and the peppers. Mix well and cook for 2 minutes.

– Add the soy sauce, vinegar, chilli and garlic paste, chilli paste, and 300ml boiling water. Mix well.

– Mix the cornflour and 1 ½ tbsp of water in a small bowl. Add this paste to the pan. Mix well.

– Add the fried paneer with a pinch of salt and black pepper. Stir to combine and cook for 2 minutes.

Time to serve!
