Chicken Sandwich

This is no ordinary chicken sandwich! The spiced yoghurt marinade makes it truly delicious and definitely one to try!
This recipe makes 2 sandwiches.

2 boneless, skinless chicken thighs, roughly chopped
olive oil
sourdough bread
salted butter
spinach leaves

For the marinade
½ cup gram flour, dry roasted for 3-4 minutes
1 tsp black
1 tsp black salt
1 tsp chilli powder
1 tsp garam masala
1 tsp ground cumin
1 tsp kasuri methi – dried fenugreek leaves
4-5 tbsp natural yoghurt
pinch of salt

For the Dressing
2 tbsp yoghurt
pinch of salt
pinch of ground cumin

– Place the gram flour in a hot pan and dry roast for 3-4 minutes.

– Transfer to a large bowl. Add the black salt, black pepper, chilli powder, garam masala, ground cumin, kasuri methi, yoghurt, and a pinch of salt. Mix well.

– Add the chicken, mix and let it marinate for 30 minutes if possible.

– Heat 5 tbsp of olive oil in a frying pan.

– Add the chicken and cook for 5-6 minutes. Add the red onion 2 minutes before the end.

– To make the dressing, mix the yoghurt, pinch of salt and ground cumin in a small bowl.

– Spread some butter all over your sourdough slices and toast in a hot frying pan.

– Add some spinach leaves to one slice. Drizzle over some dressing.

– Add the chicken and red onion, and place the other slice of bread on top.
