These spicy, crispy chicken bites are the ultimate crowd please. And super easy to make!
Ingredients
300g chicken breasts
oil of choice
For the Batter
¼ tsp salt
¼ tsp chilli powder
¼ tsp ground coriander
¼ tsp garam masala
¼ tsp tandoori masala
pinch of black pepper
1 green chilli, finely chopped
1 garlic clove, grated
½ inch fresh ginger, grated
1 tsp lemon juice
1 tbsp rice flour
1 tbsp plain flour
Method
– Chop the chicken into bitesize pieces and place it in a large bowl.
– Add all of the ingredients for the batter, except the flour. Mix well.
– Add the rice four and plain flour. Use your hands to rub them into the chicken.
– Heat 1-2 cups of oil in a deep frying pan. Lower the heat to medium.
– Carefully drop the chicken pieces, one at a time, into the oil. Cook until golden.
– Use a slotted spoon to transfer the chicken to kitchen roll-lined plate to remove any excess moisture.
– Repeat the process with the remaining ingredients and place them on a serving bowl. Option to garnish with some chopped, fresh coriander leaves.
