Chicken Fajita Style Traybake
This is a perfect mid-week family meal or packed lunch! You only need one-tray and 30 minutes.
To save time, you can use ready-made tortillas.
This recipe is inspired by “The Shortcut Cook All in One” by Rosie Reynolds.

Ingredients
For the Filling
oil of your choice
1 red pepper, roughly chopped
1 yellow pepper, roughly chopped
1 large brown onion, roughly chopped
4 chicken thighs, cut into bitesize chunks
ground black pepper
2 tsp smoked paprika
2 tsp dried oregano
5 garlic cloves, roughly chopped
2 tsp ground cumin
2 tbsp olive oil
salt
2 avocados, peeled and chopped
1 red onion, finely chopped
2 large tomatoes, roughly chopped
juice of ½ lemon/lime
4 tbsp natural yoghurt/sour cream
400g black beans, drained and rinsed
250g ready-cooked rice
250g cheddar cheese, grated
For the Tortilla
150g plain flour
150g chapati flour
¼ tsp salt
120ml water
Method
– Preheat the oven to 200°C / 180°C with a fan.
– In a deep baking tray, add the peppers, onion, and chicken.
– Add a generous sprinkling of black pepper, smoked paprika, dried oregano, garlic cloves, ground cumin, 1 tsp salt, and olive oil. Mix well.
– Place the tray in the oven and cook for 20 minutes.
– In a large bowl, add the avocado, red onion, tomatoes, a sprinkle of salt and pepper, and lemon juice. Mix well and set aside.
– To prepare the tortilla, add the flour, and salt to a large bowl. Then add a little bit of water at a time, and mix until you form a nice soft dough. The bowl should be clean once you form the dough.
– Knead the dough for 2 minutes and cover in a little bit of oil. Cover it with a bowl, and let it rest for 15 minutes.
– Roll the dough into a large sausage shape and cut it into equal portions. Roll these portions into balls and cover them with a little bit of flour. Use a rolling pin to roll the dough portions into very thin tortillas.
– Add one tortilla to a hot pan. Once they form bubbles, flip them over. Add a drop of oil so that they don’t go crispy and cook for 2 minutes. Repeat this with the other portions.
– Remove the baking tray from the oven. Add the black beans and ready-cooked rice, and put it back in the oven for 5 minutes.
To construct the fajita, place one tortilla on a plate, add some natural yoghurt, chicken mix, avocado salsa, and some grated cheese – enjoy!
