Chicken Chilli Fry

This recipe is super delicious. I love spice so this is going to be hot but feel free to amend the level of spice according to your taste.
Serves 4

2 tbsp coriander seeds
4-6 dried red chillies
¼ tsp cardamom pod seeds (6-8 cardamom pods)
oil of choice
2-3 small red onions, finely chopped.
3 garlic cloves, grated
1″ fresh ginger, grated
1kg skinless and boneless chicken breasts, chopped into bitesize pieces
1 tsp turmeric powder
1 tsp ground cinnamon
handful fresh coriander leaves, roughly chopped

– Add the coriander seeds, dried red chillies, and cardamom pod seeds to a medium-hot pan. When they start to smoke, take them off the heat. Transfer them to a pestle and mortar and grind to a coarse powder.

– Put the same pan back on the heat and add 2-3 tbsp of oil. Add the onions and cook for 10 minutes until golden.

– Add the garlic and ginger. Cook for 1 minute.

– Add the chicken. Mix well and cook on high heat for 10 minutes. Make sure to stir it regularly.

– Add the dry roasted spices to the chicken, along with the turmeric and cinnamon. Mix well.

– Add the coriander and stir through.

– Serve and garnish with some extra coriander.
