This is a delicious sandwich for anyone looking to jazz up the humble sandwich. Delicious cheesy chutney toastie, ready in minutes. Makes 1-2 sandwiches.
Ingredients
50g fresh coriander leaves, rinsed
25g fresh mint leaves, rinsed
Juice 1 lemon or lime
1 green chilli
½ tsp sugar
½ tsp salt
2 tbsp water
60-70g paneer, grated
20-30g cheddar, grated
1 red onion
1 tsp mustard seeds
2 slices white bread (or brown if preferred)
Method
– Add mint and coriander to a blender with the lemon/lime juice, chilli, sugar, salt and water.
– Blitz until smooth to make the green chutney.
– Add splash olive oil to a hot pan and add the mustard seeds until they start to pop.
– Add the onion to the pan and cook for 3-4 minutes until they start to colour.
– Turn off the heat and leave for a further minute.
– Butter the bread.
– Add the onions to the cheeses with a sprinkling of salt and pepper and mix together.
– Spread the green chutney over the inside of one side of the bread.
– Toast the bread, butter side down.
– Add the cheese and onion mix and cover with the other slice and toast in a sandwich toaster.
Serve immediately while still hot.
