This is a delicious sandwich for anyone looking to jazz up the humble sandwich. Delicious cheesy chutney toastie, ready in minutes. Makes 1-2 sandwiches.
50g fresh coriander leaves, rinsed
25g fresh mint leaves, rinsed
Juice 1 lemon or lime
1 green chilli
½ tsp sugar
½ tsp salt
2 tbsp water
60-70g paneer, grated
20-30g cheddar, grated
1 red onion
1 tsp mustard seeds
2 slices white bread (or brown if preferred)
Add mint and coriander to a blender with the lemon/lime juice, chilli, sugar, salt and water.
Blitz until smooth to make the green chutney.
Add splash olive oil to a hot pan and add the mustard seeds until they start to pop.
Add the onion to the pan and cook for 3-4 minutes until they start to colour.
Turn off the heat and leave for a further minute.
Butter the bread.
Add the onions to the cheeses with a sprinkling of salt and pepper and mix together.
Spread the green chutney over the inside of one side of the bread.
Toast the bread, butter side down.
Add the cheese and onion mix and cover with the other slice and toast in a sandwich toaster.
Serve immediately while still hot.
