This is a great accompaniment to curry, but is just as tasty on its own! It can be made on a barbecue if preferred.
Ingredients
Dough
200g plain flour
½ baking powder
½ tsp salt
½ tsp sugar
70g natural yoghurt
60-70ml water
Filling
100g grated cheddar cheese
50g mozzarella cheese grated/torn
Handful fresh coriander, chopped
1 green chilli, finely chopped
Method
– Mix together flour, baking powder, salt and sugar and ad the yoghurt.
– Gradually add the water until dough is no longer sticky.
– Knead by hand for a minute.
– Oil hands with sunflower oil and tap over the dough and leave to rest for 10 mins while preparing filling.
– Mix together cheeses, coriander and green chilli.
– Separate the dough into four pieces.
– Flour surface, roll each piece into a ball and then roll flat with a rolling pin until it is around 3-4”.
– Divide the cheese mix into the centre of each piece of dough and pinch together, dust with a little more flour and then roll out to your preferred shape.
– Lightly flour a baking sheet and add dough and cook for 1 minute on each side under a hot grill.
Spread some butter onto it while hot and serve with a curry dish or even by itself.
