Caramel Popcorn

Indulge in the most delicious festive snack – caramel popcorn! These little treats are incredibly tasty and perfect for the holiday season. Plus, you can make them ahead of time for a hassle-free delight that’s simply amazing!

Ingredients
200g granulated sugar
90g unsalted butter, cubed
120ml double cream
oil of choice
1 cup popcorn kernels

Method
– Preheat the oven to 180°C / 160°C with a fan.

– Place the sugar in a pan. Cook until golden. Make sure not to stir the sugar while it’s boiling, just shake the pan every few seconds.

– Lower the heat, add the butter and whisk to combine. If it starts rising or bubbling, take it off the heat.

– Add the cream and whisk to combine.

– Add 1 tbsp oil to a large, hot pan. You can test the heat by adding 1 kernel – if it pops, it’s ready.

– Add the kernels, mix and cover. Keep a close eye on the popcorn and take it off the heat when they have all popped.

– Transfer half the popcorn into a large bowl. Add half the caramel and mix well. Transfer to a baking tray. Make sure they lay flat so that they will cook evenly. Repeat the process with the remaining ingredients on another tray.

– Place both trays in the oven for 10 minutes.

– Toss the popcorn and place them back in the oven for another 10 minutes.

– Toss the popcorn again and place them back in the oven for a final 10 minutes.

– Toss the popcorn and allow it cool slightly before you serve.
