This is a much healthier spin on our favourite daily snack. The beetroot also add a lovely depth of flavour and colour to boot!
Ingredients
2 large beetroot, peeled
1-2 tbsp olive oil
good pinch of salt & pepper
Method
Preheat the oven to 150°C / 130°C with a fan.
– Slice the beetroot as thinly as possible.
– Use some kitchen roll to dab the beetroot and remove any excess moisture.
– Add the oil, salt and pepper. Carefully rub the oil onto the beetroot slices.
– Lay the beetroot out onto a large baking sheet. Make sure they don’t overlap – You may need to use 2 trays or cook them in batches.
– Bake them in the oven for 10 minutes.Then, flip them all over and bake for another 10 minutes.
– Remove them from the oven and allow them to cool down completely before you serve.
