Paneer Pepper Rice
Ingredients
1 brown onion, roughly chopped
oil of choice
1 tsp cumin seeds
1 small red pepper, roughly chopped
100g paneer, chopped in to cubes
1 tomato, roughly chopped
½ tsp salt
½ tsp chilli powder
½ tsp turmeric powder
½ tsp chaat masala
125g cooked basmati rice (you can cook this the night before)
Method
– Add 2 tbsp of oil to a hot pan. Add the cumin seeds and let them sizzle before you add the onions. Cook until the onions begin to soften.
– Add the tomatoes and cook for 2 minutes.
– Add the paneer and red pepper. Stir through and cook for 2 minutes.
– Add the rice, stir through, and mix well. Cook for 2-3 minutes until the rice is piping hot.
Time to add to your lunchbox!
Sweetcorn Peas Rice
Ingredients
3-4 spring onions, roughly chopped
oil of choice
handful of frozen peas
handful of frozen sweetcorn
handful tinned chickpeas
½ tsp vinegar
½ tsp light soy sauce
½ tsp ketchup
½ tsp chilli oil (optional)
pinch of salt & black pepper
125g cooked basmati rice (you can cook this the night before)
Method
– Add 2 tbsp of oil to a hot pan. Add the spring onions and cook for 2 minutes.
– Add the peas, sweetcorn, and chickpeas. Mix well and cook for 2 minutes.
– Add vinegar, soy sauce, ketchup, chilli oil, salt, and pepper. Mix well.
– Add the rice, stir through, and cook for 2-3 minutes until the rice is piping hot.
Time to add to your lunchbox!
